You’re going to love how easy these vegan Blackberry Banana Oatmeal Muffins are to make and eat! Naturally gluten-free, and packed with oats, these muffins make a great breakfast or snack on the go. Make a batch with your kiddos after picking some blackberries for a fun Fall weekend activity!

It’s the time of year when Blackberries are ripe on the bramble bushes and kids are heading back to school. Why not make these as a treat for using up the squashed berries that you’ve picked together.

Made with minimal sugar and packed with whole oats, banana and berries, these muffins are a great treat for School or to take on a hike. 🍌Ingredients

These yummy muffins need simple ingredients, making them perfect for school lunch boxes.

Ingredients for oatmeal banana and blackberry muffins.
  • Rolled Oats: You can use either jumbo or regular oats. Jumbo gives a bit more texture which is nice, but both will taste delicious. I soak these in the plant milk before mixing so they stay soft and tender.
  • Oat Flour: You can buy oat flour pre milled, alternatively use your food processor or blender to whizz up oats to make the flour from some oats. (This only takes a few minutes) NB: Make sure to purchase Gluten free oats and flour if you do require this recipe to be totally gluten free.
  • Plant Milk: I used oat milk, but choose your favourite.
  • Banana: Really ripe bananas not only provide sweetness, they also help to bind the muffins.
  • Blackberries: Choose fresh blackberries, or use frozen.
  • Maple Syrup: Or your favourite sweetener such as agave.
  • Vanilla Essence: Choose a good quality vanilla essence.
  • Baking Powder: For lift and fluffiness
  • Olive Oil: Or other oil. I like to use olive oil but ground nut or sunflower oil is also good
  • A pinch of salt.

Follow these step-by-step illustrations for the perfect Blackberry Banana Oat Muffins.

How to make banana oat and blackberry muffins.

1.Soak the oats in the plant milk for 15-20 minutes.

2. Meanwhile, mash the bananas really well.

3. Add in the oat flour, maple syrup, oil, vanilla and baking powder to the banana along with the soaked oats.

4. Mix to combine well.

5. Gently mix in the blackberries to the oat batter. Be careful not to mix too much as they are quite fragile. I like to leave aside some to squish on top.

6. Put the banana oat muffin batter into lined muffin tins. Add some extra blackberries on top, as well as optional brown sugar and oats.

Hint: Don’t skip the soaking of the oats phase as this ensures a tender soft muffin. I like to measure it out and soak them before I start to get out all my other ingredients.

🍪Substitutions and Variations

This Blackberry Banana Oat Muffin recipe is gluten-free, low sugar and vegan, however here are some substitutes and o

  • Other Berries – Choose raspberries, strawberries or blueberries as a substitute for the blackberries.
  • Different Sweetener: Brown sugar, coconut sugar or agave syrup can all be used in place of the maple syrup.
  • Chocolate Chips: Because chocolate chips are always good in muffins.

You will need a 12 hole muffin tray and an oven to make this recipe.

🥫Storage

These blackbaerry banana muffins will last for up to 4 days in a cool, airtight container. As the berries used are fresh they won’t last much longer than that. You can also freeze these once baked and defrost as needed. Pop in the oven for a few minutes for a freshly baked flavour if you freeze them!

❗Top tip

Add some extra berries on top of the muffin before you put them into the oven and sort of squish them in a bit. That way you get a nice distribution of berries throughout the muffin.

❓FAQ

Why are my oatmeal muffins dry?

Oatmeal is very absorbent which can result in a dry muffin. To combat this in this recipe I suggest soaking the oats in plant milk before mixing up the muffins.

Are oatmeal muffins healthy?

The oatmeal in muffins is a healthy choice. The other ingredients within the muffin also contribute to how healthy the muffin is, so look for recipes that are low in sugar and contain other ingredients such as fruit.

Blackberry Banana Oat Muffins

These easy to make oat muffins are packed with bananas, blackberries and oats. Gluten Free, Dairy Free and Vegan! Perfect for breakfast or after school snacks.

Ingredients

  • 115 g oats
  • 180 g oat flour you can make your own by whizzing up some oats in the food processor or blender
  • 240 ml oat milk or other plant milk
  • 235 g bananas 2 large or 3 small very ripe bananas
  • 120 ml maple syrup
  • 60 ml oil olive oil or other oil such as ground nut or sunflower oil.
  • 1 teaspoon vanilla essence
  • 150 g blackberries
  • 1.5 teaspoon baking powder
  • pinch sea salt

Instructions

  • Pre heat your oven to 190℃/ 375℉.
  • In a small bowl, soak the oats in the plant milk for 15-30 minutes to soften.
    115 g oats, 240 ml oat milk
  • Mash the banana really well in a large bowl.
    235 g bananas
  • Add in the oat flour, maple syrup, oil, vanilla essence, baking powder, and the soaked oats (along with any excess plant milk) to the mashed bananas.
    180 g oat flour, 120 ml maple syrup, 60 ml oil, 1 teaspoon vanilla essence, 1.5 teaspoon baking powder, pinch sea salt
  • Mix together really well. Then gently fold in the blackberries. You can leave a few out to put on top of the muffins before baking.
    150 g blackberries
  • Add the muffin cases into the muffin tin. Then scoop equal amounts of muffin mixture into the muffin cases. Add extra blackberries on top of the muffins along with some oats and/or brown sugar (optional)
  • Bake for 20 minutes or until the muffins are springy and slightly golden.
  • Leave the muffins to cool completely before eating.

Notes

Make your own oat flour easily and quickly by whizzing up the weight of the oat flour needed in a food processor or blender. It only takes a few seconds of pulsing to get a lovely soft fine flour.
